How long does honey last?

⌄

Pure honey is one of nature’s most remarkable foods. When stored properly, it can remain good for years. Keep your honey tightly sealed, at room temperature and away from direct sunlight. For the best flavour and quality, always follow the best-before date on the jar.

Why does natural honey crystallise?

⌄

Crystallisation is a completely natural process and does not mean your honey has spoiled. Over time, the natural sugars in honey can form tiny crystals, changing its texture. Prefer it liquid? Simply place the jar in gently warm water. Never boil or overheat it.

What makes our honey special?

⌄

Our honey begins in the wild hills of Portugal’s Serra do Caldeirão, where Lavandula stoechas grows naturally. Unlike cultivated lavender, this wild Mediterranean variety gives our honey its delicate floral character. Harvested just once a year, each jar captures the essence of a remarkable landscape. One landscape. One harvest. Nothing unnecessary.

What exactly is Água Mel?

⌄

Água Mel is a traditional Portuguese speciality with deep roots in the Serra do Caldeirão. After the honey harvest, the remaining honeycomb is slowly simmered in water with citrus peels and aromatic herbs, traditionally in large copper cauldrons. The result is a rich, dark, aromatic syrup, a delicious expression of Portuguese honey heritage.

What is raw and unfiltered?

⌄

Our honey is carefully cold-extracted, never pasteurised and left unfiltered to preserve its natural character, delicate aromas and floral complexity. Just pure honey, shaped by the bees and the landscape they call home.
